Lazy Lasagne With a Kick

INGREDIENTS:

For the bolognese sauce:
1 red onion
1 carrot
4 cloves garlic
2 tbsp oil
1 tsp oregano
1 tsp mixed herbs
1 tsp paprika
2 tbsp tomato puree
2 tbsp balsamic vinegar
2/3 cup red lentils
2 tbsp tomato puree
1 tin chopped tomatoes
300ml veg stock
2 bay leaves
1 tbsp soy sauce
Salt and pepper

Remaining ingredients:
300g cooked pasta
1 jar of Spicy Cheezy
Handful fresh basil/parsley

METHOD:

1. Start by finely chopping your red onion, carrot and garlic.

2. Get your oil heated in a frying pan and add your onion and carrot. Fry for 5 minutes until softened and then add your garlic, season well.

3. Add in your herbs and spices, followed by your rinsed lentils.

4. Add in the balsamic vinegar, tomato puree and cook off for 1 minute.

5. Add in your tin of chopped/plum tomatoes, your veg stock and bay leaves. Season well again and turn to high heat for 10 minutes, stirring regularly.

6. Turn the heat down to low and simmer for another 20 minutes to ensure your lentils are cooked properly. You may need to add a splash more water if too much evaporates, just keep an eye on it.

7. Add soy sauce in the last few minutes of cooking, and check for seasoning. Once fully cooked, add your cooked pasta into the pan.

8. In a saucepan, heat up your Spicy Cheezy Sauce - this will only take 2 minutes.

9. To serve, start by layering your bolognese pasta mix, followed by Cheezy Sauce. Add more pasta, then more Cheezy sauce. Top with fresh herbs and enjoy!
