Smoky Sausage Fried Dumplings
Makes 7 dumplings | Takes 40 minutes
INGREDIENTS:
6 vegan sausages
½ chinese leaf cabbage, chopped finely
2 carrots, diced
4 spring onions, finely chopped
100g mushrooms, finely chopped
3 cloves garlic, minced
Thumb sized piece ginger, minced
1 tbsp soy sauce
1 tsp sesame oil
1 tbsp Smoky Bacon Mayo
1 tbsp miso paste
1 tsp Chinese five spice
14 rice paper sheets
Salt and pepper to taste
METHOD:
1. Start by placing your cabbage into a bowl with a generous amount of salt, this will help to draw out the water. Set aside whilst you start frying your veg.
2. Add a splash of oil to a frying pan and place on a medium heat. Once hot, add in your carrots, spring onions and mushrooms. Fry off for 5 minutes until softened, then add in your garlic and ginger for another 2 minutes.
3. Whilst your veg is cooking, squeeze as much water out of the cabbage as you can with your hands, then place into a separate bowl. Remove the ‘skin’ from your sausages and add them into the bowl, along with your remaining ingredients (apart from the rice paper). Mix together well.
4. Add this mixture into the frying pan and fry off for 5-7 minutes until everything has a nice colour. Remove from the heat and leave to cool slightly.
5. Into a wide shallow bowl, add some water and get ready to start assembling your dumplings.
6. Fully dip one sheet of rice paper into the bowl and lay onto a clean surface.
7. Add around 2 tablespoons of your mixture on to the sheet of rice paper and then start folding the sides of the sheets in, to make a square shape. You can move the mixture around a little bit as you fill the sheets to make sure its evenly spread.
8. Dip another sheet of rice paper in the water and place the ‘dumpling’ into the middle to double wrap it, ensuring its folded evenly.
9. Repeat these steps until all of your mixture is used up.
10. Preheat around 1 cup of oil in a frying pan if shallow frying, alternatively preheat your air fryer to 190c.
11. To shallow fry, simply place around 4 dumplings into the hot oil and fry for around 5-6 minutes each side.
12. To air fry, brush each dumpling with a little oil and cook for 12-15 minutes until crispy.
13. Serve with extra Smoky “Bacon” mayo and enjoy.
